BBQ Chicken Quesadillas

Quesadillas are definitely a staple in my diet.

I mean, it’s grilled carbs with cheese in the middle…

Yes I love quesadillas, but I love them even more when they involve cheese, caramelized onions, and BBQ sauce. There is some chicken in there, but an unhealthy amount of cheese is what makes a quesadilla, well a quesadilla.

Want to know my favorite part about these grilled masterpieces?

The possibilities are endless! I’ve made everything from a pumpkin and black bean quesadilla to a southwestern breakfast quesadilla, but I haven’t even touched the surface of the quesadilla world.

Seriously, you can make anything.

I don’t like to toot my own horn, but this is by far my tastiest creation.

I’ve had it for lunch three days this week, but I’m probably going to have it again today.

Seriously, IT IS THAT GOOD.

Yet so simple…

BBQ Chicken Quesadillas

Ingredients

  • 2 whole wheat tortillas
  • 4 ounces grilled or roasted chicken (leftovers will save you)
  • 1/2 cup sliced onion
  • 1 TBS butter (you can use oil here, but organic butter is just so much better)
  • 1 ounce of shredded gouda cheese (this cheese is essential)
  • 1 ounce of shredded cheddar cheese
  • 2-3 TBS of your favorite barbecue sauce
  • Fresh cilantro, chopped

Directions

  1. Heat a non stick skillet on medium heat and add 1 tablespoon of butter.
  2. Caramelize the onion in the pan for 15 minutes. This step is KEY.
  3. Assemble the quesadillas: layer the barbecue sauce, chicken, caramelized onions, cilantro, and cheese in a tortilla. Top with another tortilla.
  4. Heat another tablespoon of butter in a cast iron skillet. Grill the quesadilla for 3-5 minutes on each side until golden brown.
  5. Slice and enjoy.

BBQ sauce is one of my new loves as of a couple months ago. Smashed in a wrap with cheese and chicken?? It’s only 8:30 and I am already thinking about lunch :)

This sounds delicious!!! I love quesadillas too because they are so quick and easy. I’m sharing this recipe with my quesadilla loving boyfriend too. I’m sure he’ll love it!

The hubs would absolutely LOVE this! Quesadillas are his go-to at-home meal, and he will put BBQ sauce on pretty much anything. The caramelized onions are a great touch, as is the gouda cheese (which I actually do have in the fridge!).

Sounds absolutely amazing! I have some chicken defrosting in the fridge so I might have to try these tomorrow. Plus maybe throw some avocado in for fun.

Do you ever calculate the nutritional information in any of your recipes?

I don’t normally do that! I prefer to eat intuitively rather than count calories.

Oh my god that looks amazing!!! Quesadillas are easily one of my favorite dishes. That and pizza. Really anything involving cheese. ;-)

This sounds amazing! I always have ingredients on hand to make quesadillas for a quick meal because they are always so delicious and only take a few minutes. My favorite combo is black beans, corn, scallions, and then fresh guac on the side. So good!

I gotta say I too am a quesadilla lover…I just can never get passed beans, cheese, onions and maybe chicken…I guess I’m going to have to force myself to branch out cuz that looks really good.
