While I was running this morning, the only thing I could think about was having pancakes for breakfast. With peanut butter of course.
Well, peanut butter is an every day staple (see above photo).
I’ll be perfectly honest here: I normally make my pancakes from a prepackaged mix.
Hey, I deserve to be lazy sometimes!
Today on the other hand, I decided to make my pancakes from scratch.
These turned out great!
They actually only took me about 15 minutes from start to finish, which actually isn’t that much longer than it normally takes me to make breakfast.
Healthy, delicious, and fast?
Winning!
Easy Whole Wheat Pancakes
Ingredients
- 1 cup whole wheat flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 TBS honey or maple syrup
- 3 TBS oil or melted butter
- 1 cup milk
- 2 large eggs
Directions
- Preheat a cast iron pan to medium low heat.
- In a large bowl, stir the honey (or maple syrup) and oil together. Once well mixed, add the milk and eggs. Beat well.
- In another bowl, mix the dry ingredients.
- Add the wet ingredients to the dry ingredients.
- Mix well, but don’t over-mix. The batter should be a little clumpy.
- Grease the pan with oil or butter.
- Cook to pancakes for 2-3 minutes per side, or until golden brown.
- Top with desired toppings.

Looks good. I’m usually too lazy to make pancakes period, even from a mix. My go-to breakfast that I never seem to tire of is an egg sandwich.

Totally requesting these for next time. Honey/maple syrup in the pancakes… Amazing much? They look perfectly fluffy too. They’re now on my list haha.

I used to always try to make my pancakes from scratch (oh she’s glow’s spelt are a fav) until I found Kodiak Mix here. It’s amazing.

Honestly? My fav breakfast is plain Greek yogurt with granola, banana, a drizzle of honey and almond butter.
you use a mix?! i feel like you just told me santa isn’t real… lol! i always make from scratch, but i do like the pumpkin mix my mom uses.
favorite breakfast… i love really good french toast and caramelized bananas and peanut butter syrup with cinnamon. and coffee.

I usually use a mix too. I may have to change that, though! Those pancakes look delicious. I love breakfast food way too much to ever choose a favorite. Egg sandwiches, pb and banana toast, cereal, oats, oatmeal..it’s all amazing!

I’m not a huge pancake girl, but these look really good! My favorite breakfast has to be oatmeal and nut butter. Sometimes I get too much of it though and definitely try to switch it up. I’ll need to try these!

Nothing wrong with premade pancake mix. My heart belongs to Trader Joe’s multigrain mix. So good! Fav breakfast is definitely pancakes. I had a huge stack of pumpkin spice pancakes at a bfast joint in california this morning and they were the best ones I’ve had in a loooong time.

Overnight oats made with yogurt is my favorite breakfast but I do love my pancakes! I normally make them with half oats, and halkf oat bran!

your girlfriend is legit!!!! its ok, my best friend and I (she lives in OH) have a snail-mail exchange and she may or may not be sending me peanut butter haha.
Normally I just have cereal or oatmeal or a smoothie + clif bar cuz I don’t have a lot of time to cook breakfast in the AM, but when I have time to make something special I love omeletes or scrambled eggs, and crepes!
