A Quick Weeknight Meal: Grilled Halibut Fajitas

You guys might not know a whole lot about me, but remember this:

I am a foodie and I love to cook.

Even on a busy weeknight, I still find the time to throw something together that isn’t a frozen meal or a bowl of cereal. To me, I find absolutely no joy in just “heating something up.” I take great pride in preparing my own meals and enjoying them the way food was meant to be enjoyed.

Last night, I made this dish in about 20 minutes (including prep time), but it was better than some of the meals that have taken me over an hour this week! As long as you know what you are doing, simple food does not have to be tasteless and boring ;)

Simple. Fresh. Healthy. Flavorful.

Did I mention that is has avocado?

Grilled Halibut Fajitas

Ingredients

  • 1 1/2 pounds wild halibut
  • Salt and pepper, to taste
  • 1 TBS chili powder
  • 2 cloves of garlic, finely minced
  • 1 fresh lime
  • 1 TBS olive oil
  • 8 tortillas
  • Fresh salsa
  • 1 avocado, sliced

Directions

  1. Preheat the grill to medium-high heat.
  2. Cut the fish into 1-inch strips. In a bowl, add the salt, pepper, chili powder, garlic, the juice of one lime, and the Halibut. Toss well and marinate for 30 minutes to an hour.
  3. Lightly oil the grill. Place fish on grill gently and cook for 3 minutes on each side, turning carefully with tongs.
  4. Meanwhile, heat the tortillas and slice the avocado. If desired, serve with other condiments.

Yeah they are pretty good. My all time favorite product is the genesis bread. Have you ever had that? It is in the blue package.

I used the same tortillas for my vegan quesadillas last night! Love them. And avocado is amazing.

I love to cook, even on busy crazy week nights because I know I will feel so much better afterward and enjoy my food THAT much more. These look AMAZING. I love Mexican food, and incorporating halibut is a great idea. I’m trying to add more fish into my diet. I LOVE fish a ton but for some reason don’t eat it as much as I should. Totally marking this recipe. Thanks!

Most of the time I don’t consider myself a cook — I like to put ingredients together though :) Fajitas are so delicious and yes, they are so simple! Why take 20 minutes to heat up a frozen pizza when you can have something this delicious?

Holly – you hit the nail on the head. Why take those 20 minutes to watch an oven heat up when you can make a masterpiece and know exactly what you are putting into your body.

Great food doesn’t have to be complicated. Simple goes along way.

I try to cook on busy weekdays, but it usually doesn’t happen. Luckily we usually have breakfast for dinner those nights, which I LOVE!! :)
