First of all, I want to wish everyone a happy “Pre-Thanksgiving!”
This holiday only comes once a year, so live it up!

This weeks “Soy Simple” challenge was to makeover a traditional Thanksgiving meal by using soy milk or soy meat.
Honestly, I’m not a huge fan of soy meat. I’ve had it a few times when I was out at a restaurant or something, but I don’t think I’ve ever actually prepared it at home. I love eating tofu and tempeh, but the soy meat kind of skeeves me out. I’m not a vegetarian, so I don’t see the point in eating it!
I actually love soy milk though. It’s a good source of protein and loaded with vitamins and minerals. It also comes in a variety of flavors like vanilla, chocolate, and unsweetened. Actually, I think I’ve seen a pumpkin spice flavor!
Tomorrow, we’re having a Thanksgiving pot luck at work for my department, and one of my designated dishes is “bread.”
I was going to bake a double batch of my honey whole wheat rolls, but I wasn’t sure how well those were going to go over. I don’t want to be “that guy” that brought the healthy dish. As soon as people hear the phrase “whole wheat,” they freak out!
Instead, I decided to bake some pumpkin muffins!
These are technically bread right?
They are in my book!
Pumpkin Muffins
Ingredients
- 1 cup canned pumpkin
- 1/2 cup organic turbinado sugar
- 1/4 cup melted butter
- 2 eggs, beaten
- 1/2 cup soy milk
- 1.5 cups whole wheat flour
- 1/2 tsp salt
- 2 tsp pumpkin pie spice
- 1 tsp baking soda
- 2 tsp baking powder
Directions
- Preheat oven to 350*
- In a small bowl, beat together wet ingredients.
- In another bowl, mix the dry ingredients.
- Add dry ingredients to wet ingredients.
- Fold in pecans
- Fill six lined muffin cups with batter.
- Sprinkle the muffins with pumpkin seeds.
- Bake at 350 degrees for 18 minutes.
Believe it or not, but I don’t really pumpkin.
I’ll eat pumpkin pancakes, pumpkin muffins, and definitely pumpkin bread, but recipes that are primarily pumpkin just don’t do it for me.
I won’t touch that pumpkin pie, but I am all over the pecan.
By the way, these came out delicious.

yummmm they look so fluffy, & I think you made a good choice with the muffins… its easier to disguise whole wheat when its mixed w/ pumpkin & sugar!
Those look so good! It’s been way too long since I’ve had muffins.
I’ve tried eggnog, gingerbread, and pumpkin soy milk… they’re all ok and fun to try, but definitely really sweetened and rich tasting.

I love pumpkin muffins! My mom used to make them with chocolate chips and serve it with a cream cheese spread that I’m sure had more powdered sugar in it than I care think about.

Where do you normally shop?
Turbinado is a form of sugar that is less processed and tastes a little like molasses. I love it in baked goods!
