Honey and Cinnamon Roasted Sweet Potatoes

You get the perfect sweet and savory side to dish to accompany pretty much any meal.

The truth is, I pretty much live on side dishes. Whenever I prepare a meal, I would rather have smaller portions of 4-5 different things rather than larger portions of 2-3 things.

I don’t get bored with food, but I get bored with the SAME FOOD. I’m a foodie, so I can’t just eat the same thing all the time ;)

When I saw that organic sweet potatoes were on sale for 99 cents a pound at Publix the other day, I loaded up my cart with about 10 of them. Yep, I cleaned them out!

My skin might turn orange this week, but I think it’s impossible for me to get tired of sweet potatoes.

Honey and Cinnamon Roasted Sweet Potatoes

Ingredients

  • 4 sweet potatoes, sliced into rounds or cubes
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup honey
  • 2 teaspoons ground cinnamon
  • Salt and freshly ground black pepper, to taste

Directions

  1. Preheat oven to 400*
  2. Lay the sweet potatoes in a single layer on a roasting pan lined with foil.
  3. Drizzle the olive oil, honey, cinnamon, salt, and pepper over the potatoes. Mix thoroughly.
  4. Roast for 35-40 minutes, flipping half way through.

I love putting cinnamon on my sweet potatoes. My mom makes a killer sweet potato casserole too that’s topped with coconut and walnuts. :-)

Mmmm! Must.Try.Soon! I never slice my sweet ‘taters in rounds like that. That’s the fancy way Whole Foods slices theirs, too! :)

Those look top notch! My favorite way to eat sweet potatoes is exactly the way you cooked them, roasted slices topped with cinnamon. I love how they are soft on the inside, but slightly crusted and (sometimes) caramelized on the outside.

Yum! Those look really good!! Just curious, but do you eat the skin too??
I love sweet potatoes! In fact, one of my favorite breakfasts now is to cut a sweet potato in half, cook it in the micro for 8 minutes, then top with cinnamon, raisins, and almond butter! Yum!!

Oh, you know about my obsession with sweet potatoes! I love ‘em pretty much any way they come, but simply rubbed with olive oil, sprinkled with salt and pepper, and baked until soft might be my favorite way to eat them. These roasted sweet potatoes look pretty fantastic!

I think it’s near impossible for me to get tired of sweet potatoes, too! I am perfectly happy having one just baked as-is and dipped in hummus or BBQ sauce…but roasting them with honey and cinnamon? Now that sounds pretty fantastic, too.
