Hummus and Avocado Crab Salad

After making my Crab and Avocado Pizza, I have been obsessed with lump crab meat. It is so good!

This turned out a lot like my Hummus Egg Salad, but the creaminess of the avocado really took the dish up a notch.

Now that we are getting into the spring season, I am looking forward to making dishes with a lighter, fresher flavor. For me, the winter months are about warm, comforting meals, but I like something a little more refreshing during the warmer months like spring and summer.

Lump crab meat, hummus, and avocado are complimented with a delicious combination lime juice, cilantro, and red onion. This makes a great appetizer or a light lunch served over a bed of greens. It also makes a great sandwich!

I was impressed with how this turned out and I can’t wait to make this again for lunch tomorrow!

Hummus and Avocado Crab Salad

Serves 2

Ingredients

  • 6 oz lump crab (or claw)
  • 1/2 avocado, mashed
  • 2-4 TBS roasted garlic hummus (roasted red pepper would be good too)
  • 2 TBS fresh cilantro, chopped
  • 2 TBS red onion, chopped
  • 2 TBS lime juice

Directions

  1. Combine everything in a large bowl and mix well.
  2. Serve over toast or salad.

So flavorful. So fresh.

This salad packs in so many delicious flavors! Perfect for warmer weather – which is hopefully around the corner for New England. I definitely crave lighter fare during the spring and summer months. At the height of the summer heat, I try my best not to even turn the oven on! This recipe will be saved, for sure.

My meals definitely change with the season. I like light, fresh meals when the weather get’s warmer (especially in these Alabama summers..ugh).

Every time I see that you’ve included avocado in a recipe, I know I’ll like it. I LOVE avocado and probably have it everyday!

I bet this tastes really refreshing! I wonder if it would work mixed with breadcrumbs and made into a crab cake/crab burger?

I do change my eating habits based on the seasons, but only I tiny bit, in regards to produce. I am getting so excited for summer fruit! :)

This looks so refreshing! I don’t eat seafood, but recently made crab cakes with tempeh that were awesome… I wonder if that would work here too?

My eating habits definitely change seasonally – I like to use the most fresh/local ingredients possible. You could say my diet changes with the Farmer’s Market inventory. :)

What kind of crab do you buy? Is it in a pouch or a certain brand?? I can’t seem to find anything but the fake stuff here in Arkansas…

I buy lump crab meat from Whole Foods. It’s near the seafood section. Make sure that it says “wild caught.”

This looks great Matt, and I happen to have a container of crab meat in my fridge right now! I feel the same way about spring vs winter meals. I’m all about the rich and hearty comforting dishes in the winter, but live for light and fresh meals in warmer weather. Also, I tend to eat more cold dishes in the spring and summer. Man, I really can’t wait till summer! Bring on the summer squash, berries, and watermelon! :)

Just make sure that it’s wild caught, which most crab meat is.
