Hummus Egg Salad with Dill

Sunday was my first time having egg salad! I eat eggs almost every day of the week, but I’ve still never had it!

If there’s one food that I absolutely cannot stand, it’s mayonnaise. Ever since I was a little kid, the sight, smell, and taste of mayo has given me the chills. When I was younger, my one of my favorite fast food meals was Subway. I know, I’m weird ;)

The lady who worked there knew EXACTLY what I wanted every time I came in. A foot long on white bread with turkey, bacon, double cheese, lettuce, and tomato. NO MAYO. When she saw me, she automatically started making it. Yeah, I was there a lot…

However, I suddenly had the most random craving for egg salad on Sunday. After thinking about it for a little while, I had the crazy idea of mixing hummus with hardboiled eggs instead of with mayonnaise.

Hummus is used as a sandwich spread, so why not?

The results were delicious!

The hummus added a nice creaminess, but it also added a lot of flavor. If you’re a mayo hater like me, this is a must try!

Hummus Egg Salad with Dill

Ingredients

Serves 1

  • 2 eggs, hard-boiled and peeled
  • 1 TBS fresh dill, minced
  • Pinch of paprika
  • 2 TBS store-bought or homemade garlic hummus
  • Salt and pepper, to taste

Directions

  1. Chop whole eggs and place into a large bowl. If you are just using the whites (which I do not recommend), then carefully cut around the yolks and discard. Trust me, use the yolks. They are delicious and loaded with nutrients.
  2. Add remaining ingredients and stir well.

This might be the best sandwich I have ever made…

I love egg salad, and I adore hummus, so this pairing sounds fantastic to me! I just made an avocado egg salad, but there was a bit of mayo in there. I sub in 2% plain Greek yogurt for most of the mayo, and have made it will all yogurt with yummy results

I don’t know if you watch Top Chef, but Jimmy Fallon was a guest last week and he talked of his hatred for mayo — his story was pretty funny. I’m on the fence about it. Sometimes mayo adds a lot of flavor, and sometimes it grosses me out.

Either way I love egg salad. Sometimes I just used mashed eggs, no mix in or anything. Or, I use mashed avocado. That tastes good too!

Interesting use of hummus- very clever idea! I’m not a big mayo person either so when I make egg salad, I often sub in dijion mustard for mayo. Other times, I’ll use a very scant bit of mayo with a good squeeze of lemon juice to cut the flavor. Egg and olive salad is also good with just a tiny drop of mayo to bind it.

I’m the same way. Only because when my dad makes Egg Salad, he would leave globs of mayonaise not fully stirred in. YUCK! This looks like a great alternative.

yum! I love eggs anything. I’ve tried fried eggs before with hummus on bread and that was pretty tasty…im def going to give this a whirl!

I feel the EXACT same way about mayo. It is all things terrible and gross and nasty. I’ve used all sort of fun substitutes in lieu of mayo for various salads: hummus, mashed avocado + mustard, greek yogurt. There are just so many ways you can do better than mayo.

I totally agree on the mayo deal. Ick. I use hummus and laughing cow cheese to make my egg salad. It’s delish!! :)

What a great idea! I hate mayo too, so I always sub greek yogurt into my egg salad, but hummus sounds like delicious swap!
P.S. if there’s a trader joe’s near you, they make a great habenero egg white egg salad!

Hehe, my Dad abhors Mayo. He prefers Miricle Whip. I don’t eat either, but apparently he can tell a difference between the two.

I always use hummus with my egg salad like that! Or I stuff hummus in hard boiled egg yolks for “angeled eggs”.

I actually like mayo but I LOVE hummus and will def try this version out. Healthier to boot.
