Maple Cinnamon Vanilla Peanut Butter

by Matt on February 20, 2011

I was planning on posting this early next week (I have so many other posts written), but I have had about 10 people ask me for the recipe!

Let’s just say that Christmas is coming early this year…

If you’ve been following my blog for awhile, then you probably already know this, but I live on nut butter. I have an entire cabinet devoted to these creamy delicacies.

Out of all the nut butters out there, I’m a peanut butter boy. Almond and cashew butter are a close two and three, but peanut butter will always remain number one in my heart.

Believe it or not, this was actually my first time making peanut butter! I’ve made chocolate pecan butter in the past, but it ended up dry and crumbly (I think my pecans were past their prime).

When I spotted some organic peanuts in the bulk bins last week, I knew that I had to give homemade peanut butter a try. If you do make this, make sure your peanut are dry roasted, organic peanuts. There are a ton of pesticides involved when growing peanuts, so you definitely need to make sure you buy organic.

At first, I was just going to make regular peanut butter, but at the last minute, I decided to spice it up a little bit with a few of my favorite ingredients.

Honestly, I might never buy peanut butter again. The homemade stuff is just too good!

It was the perfect consistency and had just the right amount of salt. I am very picky about my nut butters, so making my own allows me to control every little detail.

Trust me, this stuff is GOOD.

Maple Cinnamon Vanilla Peanut Butter

Ingredients

  • 3 cups organic unsalted, dry roasted peanuts
  • 1/4 tsp salt
  • 2 tsp pure vanilla extract (don’t use that imitation stuff)
  • 1 TBS cinnamon
  • 1-2 TBS maple syrup (depending on how sweet you want it)

Directions

Peanut Butter

  1. Add nuts to the food processor.
  2. Turn on the food processor and a process until you have the desired consistency. Scrape down the bowl as necessary. I think this took me around 5-10 minutes.
  3. Add salt slowly, process, then taste test.  Repeat until desired saltiness is achieved.

Maple Cinnamon Vanilla Peanut Butter

  1. To the peanut butter, add the vanilla extract, cinnamon, and maple syrup.
  2. Turn on the food processor and process for about 5 minutes. Scrape down bowl a few times as necessary.
  3. It will thicken a bit from the cinnamon, but let the food processor do it’s thing for about 5 minutes. It will all come together.

That jar has already come and gone ;)

The first time I made peanut butter…my thoughts were much the same as yours. “Oh my god, why haven’t I done this sooner?!” haha. Love how customizable it is. And this flavor definitely looks like a winner. I’ve never tried adding vanilla!

Wow. It looks amazing! I might have to try to make this and just hope that my blender doesn’t overheat again…

I’m with you on peanut butter above the other nut butters. My favorite “task” at Whole Foods is grinding my own PB! This recipe sounds amazing. I think I need to invest in a food pro that was created in the past decade before attempting making my own at home…

Mine has only ever gotten to the dry and crumbly stage. Don’t worry, I still ate it!

This looks amazing! Here is my question, do you just eat this on bread or are there other ways to eat it? I love nut butters as well however I try to control my bread intake and this may score high the too delicious scale for me to have in my house (on the block, in Canada at all).

I eat it with a spoon.

That looks very good! I always sprinkle cinnamon on my AB sandwiches, so I should just make cinnamon AB!

Have you tried Sunflower Seed Butter? It tastes a lot like peanut butter, but I like it a bit more.

I LOVE sunflower seed butter! I’ve only tried Naturally Nutty, but it was awesome.

That is awesome and it looks so easy. I’m a big nut butter fan too but I think peanut butter will always win in my heart as well.

Yum! I have got to try this! I love that you used ORGANIC peanuts! :D Do you think I could also make this with almonds?

I’m sure you could make it with almonds! You may to have to add a little oil since almonds are a little dryer, but I’m sure it would work fine. Make sure you use dry roasted almonds (unsalted). Let me know how it turns out!

PB is definitely my favorite nut butter — almond is good too, but PB is the best.

I love the add-ins you use — maple is such a good flavor!

I bought vanilla extract from Whole Foods; I hope that’s the good stuff!

I totally agree that homemade is the way to go. I had so much fun making it and it tastes so good!! And it’s a good reason to get to WF for their bulk section. ;-)

As long as it says “pure” instead of “imitation” on the bottle, you’re good.

I still haven’t tried making nut butter…I’m afraid my food processor won’t be up for the job!! Although every time I’ve tried the homemade stuff, it’s awesome, so maybe I need to overcome my fears…
